January is proving to be a crazy time. And I needed some comfort, so I made these Sweet Potato Biscuits. They’re a subtle twist on your traditional southern biscuit. You get the tenderness of a biscuit with the heartiness and warmth of a sweet potato.

Sweet potatoes are one of my ultimate comfort foods. I love sweet potato everything… pies, fries, baked, all the things. So these just seemed perfect for my mood right now. They’re so soft and comforting. Like little hugs.


Sweet Potato Bisuits
Ingredients
- 2 c flour
- 2 tbsp light brown sugar
- 2 tsp baking powder
- ½ tsp baking soda
- ¾ tsp salt
- ½ tsp ground cinnamon
- ¼ tsp grated nutmeg
- 6 tsp cold butter (cubed)
- 1 large sweet potato (about 1 cup)
- ⅓ c buttermilk
- 1 tsp vanilla extract
- 1 beaten egg (for the egg wash)
Cinnamon Honey Butter
- ½ c butter
- ¼ c honey
- 1 tsp cinnamon
Instructions
- Preheat oven to 425F
- In a large bowl add flour, baking powder, baking soda, brown sugar, salt., cinnamon, and nutmeg. Whisk to combine and break up lumps from brown sugar.
- Add cold butter cubes and use a pasty cutter or fork to combine until you have pea sized crumbles. Set aside in the refrigerator.
- In a separate medium bowl, combine sweet potato, buttermilk, and vanilla. Whisk until the mixture is smooth.
- Combine your dry ingredients and sweet potato mixture. Mix until the flour is covered in flour.
- Turn your dough out onto a floured work surface. Gently knead and push the dough together until your dough forms a smooth ball.
- Pat the dough down into a 1 inch layer and cut out biscuits. (Here I'm using a 3" round cutter).
- Place biscuits in your buttered pan or skillet. Beat egg well, and brush over each biscuit.
- Bake for 15 minutes or until the tops are golden brown.
Cinnamon Honey Butter
- Combine all ingredients in a bowl and whisk until combined.
